Do you know Ton Katsu? Ton means pork. Katsu means cutlet.
This is very popular Japanese food based of pork (ton). We have started our restaurant since 1912 at Ueno, Tokyo.
Tonkatsu is made by pork loin BUT we are the first restaurant which use pork fillet in Japan.
Tonkatsu has Japanized over the years more so than other European dish and it today usually served with rice, miso soup and tsukemono in the style of Japanese traditional food.
Mr. Yasujiro Ozu was a one of our best customer. He used to come our restaurant very often. As he liked very much our Fillet Katsu, we used to deliver it to film studio.
